The Meat Merchant NZ is excited to offer butchery classes hosted by Pierre Marquet, with over 16 years experience in the New Zealand meat industry. Pierre is passionate about teaching the skills of butchery and dedicated to helping you learn the techniques and processes of butchering and preparing your own delicious, fresh meats.
We believe that our classes are perfect for hunters, chefs, rural communities, butchers looking to expand on their current skills and anybody else wanting to learn about the art of butchery. Below we have listed some of the options we have available however these can be customized to the individual needs of the class.

Introduction to Butchery Class
An introduction to the basics of butchery, including the tools and techniques used to break down an animal in to its individual cuts. Perfect for those looking to gain a basic understanding of the craft or a fun activity for your next workplace event. This class is suitable for all ages and experience.
Intermediate Class
Expand your knowledge of butchery with a more in depth look at different specialty cuts, advanced techniques and skills. Perfect for hunters, farmers or apprentices looking to advance their skills.
Kitchen Creations Class
This class will teach you the art of transforming meats in to delectable dishes such as chicken ballotine, rolled roasts, butterflied chicken, filled parcels and more. Whether you're a beginner or experienced cook, this class offers a unique opportunity to learn new techniques and improve your cooking repertoire.

What is the cost?
The cost of attending the class is $300 plus the cost of the selected meat. The cost depends on the type of meat chosen. For example, if the participants select beef the cost would be $300 plus the cost of beef.
Where are the classes held?
We offer flexible options for our classes with the choice of either attending our Tasman location or having us travel to you. For travel outside of Nelson Tasman region, please contact us to discuss additional costs.
Do I need to bring anything?
Participants can bring their own knives, but basic boning knives and cutting boards will be provided.
How many people can take part in the class?
The class can accommodate a maximum of 8 people without any extra charges. However, it is important to note that with more participants, the level of the individual attention and focus may be limited. Therefore, it is advisable to keep the class size small in order for each participant to receive adequate attention.
